I have always loved Aubergines, but have lately neglected this vegetable for some unknown reason.
There are so many delicious recipes in which aubergine/eggplant can be the star.
Some of my favourites are : Melanzane Parmiggiana ( Italian dish, that is simply delicious and great to serve at a dinner party!), Pasta alla norma (sicilian pasta dish that combines aubergine,tomatoes, and ricotta), there is also the amazing baba ghanouj (middle eastern aubergine dip), or simple grilled aubergines can be great in summer (combined with other grilled vegetables)... and of course let's not forget stuffed aubergines (for the meat lovers!)
